Old Elk Wheated Bourbon Private Selection 7 Year Old is a wheated straight bourbon from Old Elk, selected as a private pick and bottled at 110 proof (55% ABV).
Old Elk was founded in 2013 by entrepreneur Curt Richardson, who set out to create a legacy bourbon, and brought in master distiller Greg Metze with his decades of experience making bourbon. Old Elk's wheated bourbon recipe ups the wheat and keeps the corn at the minimum: 51% corn, 45% wheat and 4% malted barley.
Seven years in the barrel and a high wheat content give a soft, rounded bourbon with warm sweetness, while the higher proof of this private selection adds depth and intensity.
A private pick of an acclaimed wheated bourbon, it makes a fine gift for wheater fans.
Sip it neat, then add a few drops of water.
Bourbon must be made in the United States from a mash of at least 51% corn and aged in new charred oak containers, and straight bourbon must be aged at least two years. Those rules give bourbon its characteristic sweetness, with caramel and vanilla drawn from the charred barrels.
Wheated bourbons replace rye, the usual spicy second grain, with wheat, which gives a softer, sweeter whiskey with notes of honey, caramel and bread. Private selections are barrels or batches chosen for their particular character, so each one is a little different.
