Outlaw Distillery Bourbon is a grain-to-glass wheated bourbon made from local corn and wheat in small and single-barrel batches, aged in American white oak with toasted French oak, bottled at 86 proof (43% ABV).
Outlaw Distillery was started in January 2015 in Midvale, Utah, by a diesel mechanic with an interest in distilling, who built much of the distilling equipment himself. The bourbon is made from about 75% corn and 25% soft white wheat, locally grown, then aged in American white oak barrels complemented by toasted French oak. It is aged to taste, not time: every barrel is opened and tasted at least once a month as it nears two years, and the bourbon is aged a minimum of three years.
Sweet butterscotch and vanilla on the nose lead to spice, cinnamon, cherry and oak on the palate, with a buttery corn character and the smoothest finish of caramel and vanilla.
The skull-and-cowboy label makes it a bold gift.
Bourbon must be made in the United States from a mash of at least 51% corn and aged in new charred oak containers, and straight bourbon must be aged at least two years. Those rules give bourbon its characteristic sweetness, with caramel and vanilla drawn from the charred barrels.
