Pacific Coast Spirits Wheated Bourbon is a six-year-old California bourbon made from California grains, distilled in a single pot still and bottled at cask strength, 57% ABV.
Made in Oceanside by head distiller Nicholas Hammond, it uses a mash bill of California yellow sweet corn, hard winter wheat and barley. Swapping rye for wheat gives a softer, sweeter and more approachable bourbon, and the slow pot-still distillation captures a rich concentration of grain oils. It won Gold at the San Francisco World Spirits Competition in 2022 and 2024.
The profile brings caramel, vanilla and oak with a hint of spice, and a long, warm finish.
The bottle with its classic label makes it a fine gift for lovers of craft American whiskey.
Add a few drops of water to open it up.
Bourbon must be made in the United States from a mash of at least 51% corn and aged in new charred oak containers, and straight bourbon must be aged at least two years. Those rules give bourbon its characteristic sweetness, with caramel and vanilla drawn from the charred barrels.
Wheated bourbon replaces the usual rye with wheat as the secondary grain. Wheat brings a rounder, gentler sweetness than the peppery spice of rye, which lets the caramel and vanilla from new charred oak take the lead. Bottling at cask strength keeps the full depth of flavour and texture from the barrel, and a splash of water lets each drinker find the strength they enjoy most.
Pot-still distillation runs the wash in individual batches rather than in a continuous column, producing a heavier, more flavourful new make. For a California craft distillery, pairing locally grown grains with this traditional method gives the whiskey a clear sense of place.
