Palmento Costanzo Bianco di Sei 2019 is an Etna Bianco DOC from Sicily, led by Carricante with Catarratto, at 12% ABV.
The estate lies in Contrada Santo Spirito, Passopisciaro, on the northern slopes of Mount Etna, and is farmed organically by hand.
The Sei wines come from bush-trained vines 80 to 100 years old, harvested by hand.
The 2019 was aged on its fine lees in steel for four months, then two months in bottle.
Citrus, white flowers and volcanic minerality make it a vivid, saline white.
Good wine rewards a little care in serving. Whites and rosés show best chilled to around 45 to 50°F, while reds are at their most expressive slightly below room temperature, around 60 to 65°F. Opening the bottle and letting it breathe for a few minutes, or pouring it into a decanter, helps the aromas open up.
