Palomo Mezcal Artesanal con Mole is an Espadín mezcal from Oaxaca macerated with all 30 ingredients of a family mole recipe and distilled a third time. It is bottled at 92 proof (46% ABV) in a 700ml bottle.
Palomo is a family mezcal brand with roots in Oaxaca back to 1930. This expression draws on mole negro, one of Mexico's most revered dishes, and uses all 30 ingredients of the family grandmother's recipe.
Ripe regional agaves are baked underground in a conical stone oven for five days, milled by horse-drawn tahona and fermented with natural yeast in wooden tinas. Double distillation gives a joven mezcal with sweet, caramel, earthy, floral and smoky flavors. For the third distillation, the mezcal macerates for four weeks with the mole ingredients, picking up notes of chiles, peanuts and spices such as cinnamon, with an incomparable herbal aftertaste. The nose brings dried chiles, dark chocolate, roasted nuts and warm spice.
It is a singular bottle for collectors and a memorable gift for adventurous drinkers.
Mezcal is made by roasting agave hearts, traditionally in earthen pits, then crushing, fermenting and distilling them, a process that gives the spirit its characteristic smoky depth. Each agave variety and each village brings its own character, which is why enthusiasts love exploring small-batch bottlings.
