PaQui Añejo is the top-of-the-line tequila from PaQui, aged a full fourteen months in American whiskey casks and bottled at 80 proof (40% ABV).
PaQui's name is said to come from an Aztec phrase meaning "to be happy". Tequila Holdings was founded by John Chappell in 2006 and secured the PaQui trademark in 2008. Once the tequilas were developed, John and his sales manager sold bottles door to door to restaurants and bars in New York City, and a strong reorder rate led to a successful crowdfunding campaign to build production and distribution.
The tequila is made from well-matured Weber blue agave by Autentica Tequilera, NOM 1502, in Jalisco. The Añejo is the bigger, beefier sibling of the Reposado, sharing its pedigree, with fourteen months in whiskey casks adding depth and oak character to the agave.
Presented in its distinctive bell-shaped bottle with a red wax-style top, it makes a handsome gift.
Añejo tequila is aged between one and three years in oak barrels of no more than 600 litres, long enough to add colour, sweetness and spice while keeping the character of the agave, which makes it a natural sipping tequila.
Tequila can only be made from blue Weber agave in five designated Mexican states, chiefly Jalisco, and the finest bottlings are made from 100% agave. Sipping tequila is best enjoyed from a narrow-rimmed glass that concentrates the aromas, at room temperature and without salt or lime, so the character of the agave and the barrel can come through.
