Pasote Blanco Still Strength is an additive-free Highland tequila bottled at full still strength, 110 proof (55% ABV), with no water added after distillation.
Pasote is made from 100% estate-grown blue agave in the Jalisco Highlands, distilled in small stainless-steel pots with volcanic-rock-filtered well water in San Julián. This expression is bottled straight off the still, undiluted, delivering the purest and most concentrated expression of the agave. It is certified additive free.
Expect juicy tropical fruit over a mineral, wet-stone undertone, with sweet plantain and burnt sugar layered with green pepper and a touch of white-pepper spice.
For tequila purists, it makes a bold and memorable gift.
Sip it neat, then add a drop of water to open it up.
Blanco tequila is bottled unaged or rested for less than two months, so it shows the agave at its purest: bright, peppery and fresh. It is the classic choice for margaritas and palomas, and a good blanco is just as rewarding sipped neat.
Tequila can only be made from blue Weber agave in five designated Mexican states, chiefly Jalisco, and the finest bottlings are made from 100% agave. Sipping tequila is best enjoyed from a narrow-rimmed glass that concentrates the aromas, at room temperature and without salt or lime, so the character of the agave and the barrel can come through.
