Pearse Distiller's Choice is a blended 7-year-old Irish whiskey of grain and malt whiskeys from the Pearse Lyons Distillery in Dublin, bottled at 86 proof (43% ABV).
The blend is aged predominantly in ex-bourbon barrels, with a small amount of sherry-barrel-aged whiskey in the mix, and the Pearse range is proudly distilled at St. James's in Dublin 8. Founder Pearse Lyons, born in Dublin and raised in Dundalk, came from a long line of brewers, distillers and coopers, with five generations of Irish coopers on his mother's side; he later helped revive Lexington Brewing in Kentucky, and the Kentucky bourbon barrels come from that sister distillery. This whiskey includes the distillery's own single malt.
On the nose come fresh citrus notes with subtle spice and dried fruit, giving a light fruitcake character. The palate is smooth and warm with light oak, developing hints of cocoa and dried fruit, and it finishes with stewed apple, clove and custard.
