Pernod Absinthe Supérieure is a classic French absinthe made to the original nineteenth-century recipe from historic Pontarlier, coloured naturally by its botanicals with no artificial dyes or sugars, and bottled at 136 proof (68% ABV).
Pernod's story began when Henri-Louis Pernod acquired the formula for a medicinal spirit from Dr. Pierre Ordinaire in 1797 and created the world's first absinthe distillery; Pernod Fils became the top-selling absinthe in the world. This absinthe is crafted with grand wormwood, anise, fennel, hyssop and lemon balm, through classic maceration and distillation, reviving the original recipe after absinthe's long ban.
Clear with a greenish tint, it louches to opal with cold water. The nose is a rich herbal bouquet of anise, fennel, wormwood, hyssop and mint. The palate is complex and layered, first dry then gently sweet, with liquorice, sage, mace and faint citrus, and the finish is long and elegant, with lingering herbal bitterness and subtle spice.
A true French classic, it makes a fine gift for cocktail lovers.
Prepare it the French way: one part absinthe, three to five parts iced water poured over a sugar cube on a slotted spoon.
Pontarlier, in the Doubs region near the Swiss border, was the heart of French absinthe production in the nineteenth century, when the drink was the toast of Paris café culture.
The louche is the cloudy, opalescent effect that appears when cold water is added: the botanical oils, held in solution by the high alcohol, come out of suspension and open up the aromas.
Absinthe is a key ingredient in classic cocktails such as the Sazerac, where a rinse of the glass adds an aromatic anise lift.
