Pluma Negra Jabalí is an artisanal joven mezcal made from 100% maguey jabalí, bottled at 46% ABV (92 proof).
Pluma Negra is made in the hills of San Juan del Río, Oaxaca, by maestro mezcalero Rodolfo Hernández Aguilar, whose family has made mezcal there for around 45 years.
The family cooks maguey in an underground earthen oven, crushes it with an animal-drawn tahona, ferments in pine barrels and double distils in copper pots.
Jabalí is a rare, wild agave that is notoriously difficult to distil, prized for its bright, complex and often herbal, mineral character.
The clear bottle carries Pluma Negra's simple black feather, and the neck band names the agave. A bottle of jabalí is a special find for mezcal lovers and a fine gift for someone who enjoys exploring rare agaves.
