Pluma Negra Tobalá is an artisanal mezcal made by maestro mezcalero Rodolfo Hernández Aguilar from wild Tobalá agave (Agave potatorum) harvested in the semi-tropical mountain climate of San Juan del Río, Oaxaca. It is bottled at 48% ABV.
The agave is roasted in an underground oven, crushed by a horse-drawn tahona, fermented in open-air pine vats and double distilled in copper pot stills. Tobalá is a small, wild agave prized for its intense aromatic qualities.
Delicate aromas of chocolate, plum and a slight touch of tobacco lead to a palate of sweet pineapple and mango, with a light tone of peppermint and cinnamon.
The bottle with its black feather label makes a striking gift for agave enthusiasts.
Sip it slowly from a copita.
Mezcal is made by roasting agave hearts, traditionally in earthen pits, then crushing, fermenting and distilling them, a process that gives the spirit its characteristic smoky depth. Each agave variety and each village brings its own character, which is why enthusiasts love exploring small-batch bottlings.
Mezcal and other agave spirits are traditionally sipped from a copita or a small clay cup, in small sips, often alongside orange slices dusted with sal de gusano. Many are made in tiny batches by individual families, so each bottle is a snapshot of a particular place, agave and season.
