Probitas is a white blended rum created by Foursquare Rum Distillery in Barbados and Hampden Estate in Jamaica, uniting column and pot still rums from two legendary distilleries, bottled at 94 proof (47% ABV).
Probitas is Latin for honesty, and the rum was made to show what a white rum can be when it is blended honestly from great pot and column still rums. It brings together two of the Caribbean's most respected names: Foursquare, led by Richard Seale in Barbados, and Hampden Estate in Jamaica's Trelawny parish, famed for its pot still rums.
The blend combines unaged Coffey column still rum and two-year-old, tropically aged pot still rum from Foursquare with unaged pot still rum from Hampden. It is bottled at a cocktail-ready 47% ABV and non-chill filtered, and it is sold in Europe under the name Veritas.
Expect bright tropical fruit and a gentle Jamaican funk on the nose, a rich, oily palate with banana, citrus, vanilla and light pot still spice, and a long, dry, peppery finish.
Probitas was designed for the bar. Shake a classic Daiquiri with fresh lime and simple syrup to see what it can do, or build a Mojito, a Ti' Punch-style serve or a Hemingway Daiquiri with grapefruit and maraschino. Its pot still depth also lifts a Mai Tai, a Planter's Punch and a Piña Colada, and it makes an excellent rum and tonic with a wedge of lime. Sip it neat or over a single cube to taste the interplay of Barbados and Jamaica. Pair it with jerk chicken, fish tacos, grilled pineapple, ceviche or coconut shrimp.
