Quincy Street Distillery was born out of a commitment to the craft distillery heritage, bringing artisanal distilling together with innovative flavors. It creates historically inspired, handcrafted spirits with distinctive expressions of taste, from Laughton Bros. single-barrel straight bourbon, the first straight bourbon distilled in Illinois in 40 years, to its Groninger Hoek oude genever and Old No. 176 Railroad Gin. Its storefront speakeasy cocktail bar, set among the historic shops of the Chicago suburb of Riverside, serves drinks made from its own spirits.
The Dry Gin takes the opposite approach to the many-botanical gins on the market. With juniper as its only botanical, the berry's piney, resinous, gently citrusy character stands alone on a clean, five-times-distilled grain base.
At 90 proof, this more robust bottling gives the juniper an assertive presence, so it stays prominent when mixed into cocktails. It is clean, bright and unmistakably gin.
Gin heritage runs through the distillery's range. Its Old No. 176 Railroad Gin is distilled directly off the same corn mash used for its whiskey, inspired by the "railroad gin" made by some bourbon distillers before Prohibition and by moonshiners after, and named for engine No. 176, the first custom-built for the Chicago, Burlington and Quincy Railroad, which ran along the tracks just a short walk from the distillery.
