Redwood Empire Emerald Giant Cask Strength is the uncut and unfiltered edition of the Sonoma distillery's flagship rye, a blend of four- to six-year-old ryes bottled at 116.6 proof (58.3% ABV).
Redwood Empire laid down its first grain-to-glass barrel in 2015 and now has the largest rick house in California. Its whiskey ages in the foggy mornings and temperate evenings of the region that inspired its name, and the distillery uses water from the nearby Russian River aquifer with the best grains, many of them from California. Emerald Giant is named after the world's fastest-growing redwood.
The mash bill is 94% rye, 5% malted barley and 1% wheat. The colour is burnt orange; the nose shows delicate herbal tea, soft cinnamon and dried orange peel, and the palate is viscous, with Earl Grey tea, dark chocolate and coffee beans, leading to a warm spice finish.
A powerful California rye, it makes a fine gift for rye lovers.
Sip it neat, then add a little water to taste.

Cask strength means the whiskey is bottled without dilution, so a few drops of water can open up its aromas.
