Redwood Empire Grizzly Beast is a bottled-in-bond straight bourbon from Sonoma County, California, bottled at 100 proof (50% ABV) under the strict tenets of the Bottled-in-Bond Act of 1897.
Redwood Empire distils in Sonoma County, California, in a region that stretches from San Francisco to Humboldt Bay and on to the Oregon border, home to majestic coastal redwoods, some more than 350 feet high and 2,000 years old. Ageing its barrels in the temperate climate of the Northern California coast allows a slow, even extraction of flavour, producing whiskey of balance and complexity. Each Grizzly Beast release can only be made from barrels produced within a six-month span, giving true seasonal variance from batch to batch, and the original distillate is altered only by the addition of pure water from the Russian River Valley aquifer.
Its four-grain mash bill of 68% corn, 18% rye, 9% wheat and 5% malted barley has shown cherry cola and rhubarb pie on the nose, with nutmeg, sticky toffee and cedar on the palate; every batch is collectible and will never be replicated.
A bonded California bourbon, it makes a fine gift for bourbon explorers.
Sip it neat or with a drop of water.
Bourbon must be made in the United States from a mash of at least 51% corn and aged in new charred oak containers, and straight bourbon must be aged at least two years. Those rules give bourbon its characteristic sweetness, with caramel and vanilla drawn from the charred barrels.
