Redwood Empire Pipe Dream 101 is the reserve bottling of the Sonoma County distillery's four-grain bourbon, built from older whiskey stocks and more of its own grain-to-glass distillate, bottled at 101 proof (50.5% ABV).
Pipe Dream 101 highlights some of Redwood Empire's favorite components of its signature bourbon. It keeps a four-grain mash bill of 73% corn, 19% rye, 5% malted barley and 3% wheat, draws on whiskey ranging from 5 to 15 years old from roughly 200 barrels, and is cut at a higher proof than the everyday 90-proof Pipe Dream. Redwood Empire is named for the land of ancient giants stretching from San Francisco to Humboldt Bay and the Oregon border, and each bottle honors the redwoods.
The result is a craft whiskey with elevated aromas, rich textures and bold flavors: caramel, vanilla, toasted oak and warm baking spices, balanced by a hint of dried fruit and honey.
The redwood-man label with its 101 neck band makes it a great gift.
Bourbon must be made in the United States from a mash of at least 51% corn and aged in new charred oak containers, and straight bourbon must be aged at least two years. Those rules give bourbon its characteristic sweetness, with caramel and vanilla drawn from the charred barrels.
