Salvadores Destilado con Pechuga y Mole Coloradito is an artisanal mezcal from Oaxaca made from 100% Espadín agave matured eight years, distilled with turkey and mole coloradito. It is bottled at 51.4% ABV.
It is made at Casa Palacios with Maestro Mezcalero Flavio Pérez Méndez. The cooked agave is milled with a stone tahona, fermented in wooden tinas and distilled twice in a copper alembic. During the second distillation, a whole turkey breast is hung in the still along with mole coloradito, one of Oaxaca's famous seven moles, so the vapours pass through them and pick up savoury depth and spice.
The result is a tobacco-scented spirit with bittersweet chocolate, spices, toasted almonds, toasted caramel and cooked agave, a slight smokiness and a mineral finish.
With its minimalist label and wooden stopper, it is a fascinating gift for mezcal explorers.
Sip it slowly from a copita to appreciate its layers.
Mezcal is made by roasting agave hearts, traditionally in earthen pits, then crushing, fermenting and distilling them, a process that gives the spirit its characteristic smoky depth. Each agave variety and each village brings its own character, which is why enthusiasts love exploring small-batch bottlings.
Mezcal and other agave spirits are traditionally sipped from a copita or a small clay cup, in small sips, often alongside orange slices dusted with sal de gusano. Many are made in tiny batches by individual families, so each bottle is a snapshot of a particular place, agave and season.
