San Matías Tahona Reposado was created to honour 130 years of Casa San Matías, a rare tribute to tradition made with the same ancient basalt tahona stone that has been at the heart of this legendary Jalisco distillery for over a century. It is bottled at 80 proof (40% ABV).
Produced at Tequila San Matías de Jalisco in Ojo de Agua, the tequila uses the time-honoured methods the founders' ancestors used for centuries: the agave is steamed in stone ovens, crushed with the original stone tahona from 1886, and fermented in wooden vats before resting in oak barrels.
It shows a bright, slightly golden wheat colour with golden highlights and slow legs that denote great body. The aroma brings ripe fruit, vanilla and a lactic, buttery note with light minerality.
A Silver Medal winner presented in a square bottle with a twine-wrapped neck, it makes a handsome gift.
Reposado, meaning rested, is tequila aged between two months and a year in oak, which gives it a pale gold colour and a gentle touch of wood while keeping the agave bright and lively.
Tequila can only be made from blue Weber agave in five designated Mexican states, chiefly Jalisco, and the finest bottlings are made from 100% agave. Sipping tequila is best enjoyed from a narrow-rimmed glass that concentrates the aromas, at room temperature and without salt or lime, so the character of the agave and the barrel can come through.
