San Matías Tahona Reposado is a tahona-crafted reposado tequila from Casa San Matías, one of Mexico's oldest distilleries, bottled at 80 proof (40% ABV).
Casa San Matías has honored tequila tradition for more than 130 years and remains funded by 100% Mexican capital. For its Tahona line, the cooked agave is milled the traditional way, with a stone tahona wheel, which yields a rich, mineral agave character.
The reposado is a slightly golden wheat color, bright and clean. The nose shows ripe fruit, vanilla and a light, buttery minerality, and the palate is intensely sweet and mineral, with adequate acidity, roundness and harmony.
Its square bottle with the twine-wrapped neck and wooden stopper makes a warm, artisanal gift.
Reposado, meaning rested, is tequila aged between two months and a year in oak, which gives it a pale gold colour and a gentle touch of wood while keeping the agave bright and lively.
Tequila can only be made from blue Weber agave in five designated Mexican states, chiefly Jalisco, and the finest bottlings are made from 100% agave. Sipping tequila is best enjoyed from a narrow-rimmed glass that concentrates the aromas, at room temperature and without salt or lime, so the character of the agave and the barrel can come through.
A reposado, or rested tequila, ages at least two months in oak, gaining a golden color and soft vanilla notes while keeping the agave fresh.
Tahona-milled tequila is prized because the slow stone wheel crushes the fibers gently, keeping more of the agave's natural flavor.
Reposados are among the most versatile tequilas, smooth enough to sip yet lively in cocktails.
