San Matías Blanco is an unaged 100% agave tequila from Casa San Matías, one of Mexico's oldest tequila distilleries, bottled at 80 proof (40% ABV) in a 700ml bottle.
Casa San Matías has been producing fine tequilas since 1886 and is one of the oldest family tequila houses in Mexico, still funded by 100% Mexican capital. Its distillery, San Matías de Jalisco (NOM 1103), sits in Ojo de Agua in the highlands of Los Altos near Tepatitlán, and the house uses only agave grown and harvested in the red soil fields of the Jalisco highlands, harvested after at least seven years. Master Distiller Rocío Rodríguez, whose name appears on every bottle, oversees production.
The Blanco bursts with fresh cooked agave, bright citrus, pepper and herbal notes, and it is crisp and refreshing with a clean, agave-forward finish.
A classic highland blanco from a historic house.
Blanco tequila is bottled unaged or rested for less than two months, so it shows the agave at its purest: bright, peppery and fresh. It is the classic choice for margaritas and palomas, and a good blanco is just as rewarding sipped neat.
Tequila can only be made from blue Weber agave in five designated Mexican states, chiefly Jalisco, and the finest bottlings are made from 100% agave. Sipping tequila is best enjoyed from a narrow-rimmed glass that concentrates the aromas, at room temperature and without salt or lime, so the character of the agave and the barrel can come through.
