Siempre Exclusivo Edición Especial Vivo is a blanco tequila that revives a nearly lost production method: the mosto, the juice of cooked and crushed agave, is distilled while the yeast is still alive and fermenting. Made at Feliciano Vivanco y Asociados (NOM 1414), it is bottled at 95 proof, and only 9,000 bottles were produced.
The open-air 'live' distillation gives a lower yield but a more expressive spirit, hence the name Vivo, meaning living. Tastings.com awarded it 96 points and a Platinum medal, noting great depth of flavour and a little funk that points toward blanco mezcal.
The nose is sharp and peppery, with green bell pepper, lemon peel, soy, sake, grilled green apple and pineapple, sea breeze and black pepper. The palate adds lemon, green herbs, licorice, saline cooked agave, honey and silky butter, and the finish brings salted caramel, anise and black pepper with a slightly smoky edge.
The botanical label makes it a fine gift for tequila connoisseurs.

Blanco tequila is bottled unaged or rested for less than two months, so it shows the agave at its purest: bright, peppery and fresh. It is the classic choice for margaritas and palomas, and a good blanco is just as rewarding sipped neat.
Tequila can only be made from blue Weber agave in five designated Mexican states, chiefly Jalisco, and the finest bottlings are made from 100% agave. Sipping tequila is best enjoyed from a narrow-rimmed glass that concentrates the aromas, at room temperature and without salt or lime, so the character of the agave and the barrel can come through.
