St. George Dry Rye Gin is a juniper-forward gin from St. George Spirits in Alameda, California, built on a base of 100% pot-distilled rye with six botanicals, and bottled at 90 proof (45% ABV).
St. George Spirits makes several very different gins. Where its Botanivore Gin uses 19 botanicals, the Dry Rye Gin uses just six: juniper, Malabar black peppercorn, caraway, coriander seed, grapefruit peel and lime peel. In a category all its own, it is a throwback to the days when rye was a common base grain for gin.
The base is 100% rye distilled in copper pot stills, which gives the gin a rich, malty, spicy foundation that brings it closer to genever than to London dry. To let the juniper stand up to that flavorful base, the distillery uses far more juniper than in its other gins. The juniper berries are vapor-infused in a basket to gently extract their bright, fruity character, and the remaining botanicals go directly into the still.
The result has a bold, warm caraway scent and assertive notes of juniper and black pepper, finishing with peppy, lingering citrus. The grapefruit and lime bring the spice into focus with a clean, crisp edge before yielding to the richness of the pot-distilled rye.
