Stellum Black Bourbon is a cask-strength blend from Stellum Spirits, the sister brand of Barrell Craft Spirits, bottled at 109.22 proof (54.61% ABV).
It builds on the original Stellum Bourbon blend by bringing in carefully selected reserve barrels, creating a deeper and more layered expression. The bourbon marries high-rye and low-rye Indiana mash bills, one of 75% corn, 21% rye and 4% malted barley and one of about 60% corn, 36% rye and 4% malted barley, enhanced with reserve stocks distilled in Kentucky and Tennessee.
The nose opens with floral vanilla, orange creamsicle, caramel corn and mixed peppercorns, with cedar and smouldering oak emerging as it sits. The palate shows lightly charred sweet orange, leather and vanilla, then cardamom, cedar and spiced nuts receding into sweet cinnamon, and the long finish brings dark chocolate taffy, leather, tobacco and cedar.
A bold, complex cask-strength blend, it makes a fine gift for bourbon enthusiasts.
Sip it neat, then add a few drops of water to open it up.
Bourbon must be made in the United States from a mash of at least 51% corn and aged in new charred oak containers, and straight bourbon must be aged at least two years. Those rules give bourbon its characteristic sweetness, with caramel and vanilla drawn from the charred barrels.
