Stellum Black Hunter's Moon is a cask-strength specialty blend from Stellum Spirits, the sister brand of Barrell Craft Spirits, bottled at 115.52 proof (57.76% ABV).
Released in late 2022 as part of the Stellum Black series, Hunter's Moon is a warm, oak-driven bourbon made in preparation for winter and inspired by the Hunter's Moon of October. It is marked by high-rye spice and a robust woodiness meant for the time of year when the days get shorter and the nights get longer. The blend starts with Indiana bourbon and rye, layered with older whiskeys from Kentucky and Tennessee.
The nose opens with warm vanilla and butterscotch that shift toward honeysuckle and ripe mango. The palate brings bright cinnamon at first, then orange peel and earthy black plum, and the finish is sweet, upbeat and medium in length. A splash of water brings out coconut, tangerine and toasted cashew.
A seasonal cask-strength blend, it makes a fine autumn gift for bourbon lovers.
Sip it neat, then add a splash of water.
Bourbon must be made in the United States from a mash of at least 51% corn and aged in new charred oak containers, and straight bourbon must be aged at least two years. Those rules give bourbon its characteristic sweetness, with caramel and vanilla drawn from the charred barrels.
