Still Austin Whiskey Co. was founded in 2015 by three Austin families as a true grain-to-glass distillery in the heart of Austin. Affectionately known as The Musician, its flagship straight bourbon uses a high-rye mash of 70% non-GMO white corn, 25% Elbon rye and 5% Wildfire malted barley, all grown by Texas farmers, an expression of true Texas terroir. First released in Texas in 2020, it earned a Double Gold at the San Francisco World Spirits Competition, and the distillery focuses on sustainability, from local sourcing and heritage grains to returning spent grain to local ranchers.
The nose balances fruit, grain and barrel notes, with boozy pineapple, allspice and well-charred oak, leading to a bold, spicy, rich palate.
The illustrated guitarist label makes it a great gift for music and whiskey fans.
Bourbon must be made in the United States from a mash of at least 51% corn and aged in new charred oak containers, and straight bourbon must be aged at least two years. Those rules give bourbon its characteristic sweetness, with caramel and vanilla drawn from the charred barrels.
