Svöl Danish-Style Aquavit is an unaged, grain-based aquavit led by the finest caraway from Finland and rounded out with botanicals from around the world, including Icelandic angelica root and birch bark, bottled at 80 proof (40% ABV).
Aquavit is the quintessential Scandinavian spirit, and its history runs deep: the earliest mention of aquavit appears in a letter written by the Danish lord Eske Bille in the 1500s. Made with a grain or potato base and re-distilled with a variety of herbs and spices, always including caraway, aquavit developed distinct regional styles across Scandinavia. The Svöl range pays homage to the spirit of Viking exploration while drawing on modern distillation. Its botanicals are selected by Gunnar Gíslason, owner of Dill Restaurant in Reykjavik, and Jonas Andersen of MeyersUSA, and Svöl is made on a 1,000-liter copper still at New York Distilling Co. in Brooklyn, with techniques developed alongside Allen Katz.
Danish aquavits are made from an unaged, grain-based spirit and are typically the most caraway-forward style. Svöl stays true to that tradition, with caraway from Finland as its lead flavor, balanced by Icelandic angelica root, birch bark and other carefully chosen botanicals.
The result is subtly spicy yet exceptionally balanced, with bright, savory caraway up front and the angelica and birch bark rounding it out.
Svöl is perfect for savoring neat and ice-cold in the Scandinavian way, alongside smoked fish, pickled herring and rye bread, and it shines in savory cocktails such as a Bloody Mary, an aquavit Martini or a Gimlet.
