Tequila Cabal Extra Añejo is aged a full 36 months and presented in Cabal's sculpted horse-head bottle, finished in a matte black ceramic coating, bottled at 80 proof (40% ABV). This is the 100ml miniature.
The name Cabal is rooted in caballero, the Spanish word for gentleman, and the idea that one must aspire to one's full potential. The horse head draws on the charrería and horse culture of Jalisco, the very essence of Jaliscan tradition, and the Extra Añejo wears the same custom glass horse used for the other expressions, dressed in black.
The agave is baked for 42 hours in a Mason 32-ton oven built in 1911, then fermented for 72 hours with natural yeast and double distilled, under maestro jimador Eduardo S. Lara and maestro tequilero Alvaro Montes. Three years in oak give it an even richer color, aroma and flavor, amplifying the qualities of Cabal's gold-medal-winning Añejo.
The color is a deep, rich golden amber. Aromas of sweet oak, soft pepper, butterscotch and vanilla lead to a multi-layered palate of baked agave, butterscotch, caramel, peppery oak and vanilla, finishing full-bodied and lingering, with vanilla, oak and sweet cooked agave.
Extra añejo is the most mature category of tequila, created in 2006 for tequilas aged more than three years in oak barrels of no more than 600 litres. The long rest softens the agave's natural pepper and brings out caramel, vanilla and dried fruit, which is why extra añejos are usually enjoyed neat, like a fine cognac or whisky.
