Tequila Comisario Blanco is an ultra-premium tequila made from 100% estate-grown Blue Weber agave from the Arandas region of the Jalisco Highlands, bottled at 80 proof (40% ABV).
The agave is allowed to sweeten to perfection before harvest at seven to ten years, ensuring the highest sugar concentration. The piñas are cooked and crushed to extract the honey, which is fermented with a special yeast and distilled with a unique low-and-slow process. The blanco is not aged in Comisario's barrel program; it is clear and pure from its cooking and distillation.
Aromas of spun honey, waxy pear and apple, roasted pepper and delicate herbs lead to a soft, silky entry and a light-to-medium body with dried apple, mineral, yellow pepper and acacia honey flavors, finishing with a long, elegant, gently spicy fade. A superb sipping tequila.
The sculpted bottle makes it an elegant gift.
Blanco tequila is bottled unaged or rested for less than two months, so it shows the agave at its purest: bright, peppery and fresh. It is the classic choice for margaritas and palomas, and a good blanco is just as rewarding sipped neat.
Tequila can only be made from blue Weber agave in five designated Mexican states, chiefly Jalisco, and the finest bottlings are made from 100% agave. Sipping tequila is best enjoyed from a narrow-rimmed glass that concentrates the aromas, at room temperature and without salt or lime, so the character of the agave and the barrel can come through.
