Tequila Ocho Single Estate Extra Añejo El Bajío 2018 is a vintage-dated extra añejo made from agave grown on the El Bajío estate near Arandas in the Jalisco Highlands. Bottled at 40% ABV and not chill filtered, it is a pinnacle expression of Ocho's single-estate philosophy.
Tequila Ocho was created by the Camarena family in partnership with the late Tomas Estes, and it was the first tequila to name the individual rancho on every bottle and date each release by vintage. Like wine, each estate and year shows its own terroir, and Ocho deliberately ages in well-used barrels so that even its extra añejo keeps the agave front and centre.
On the nose come cherries, red fruits, oak, cinnamon and spices. The palate is sweet, with toasted oak, anise, nuts, almonds and black pepper and a slight mineral edge, carried by earthy agave, dried fruit, orange peel and caramel.
The bottle is presented in a pale wooden case marked with the vintage, making it a handsome gift and a fine piece for a collector of single-estate tequila.
Sip it slowly to taste the character of a single Highland field in a single year.
Extra añejo is the most mature category of tequila, created in 2006 for tequilas aged more than three years in oak barrels of no more than 600 litres. The long rest softens the agave's natural pepper and brings out caramel, vanilla and dried fruit, which is why extra añejos are usually enjoyed neat, like a fine cognac or whisky.
