Terralta Extra Añejo 5 Year is a tequila made by master distiller Felipe Camarena at El Pandillo distillery (NOM 1579) in the Jalisco Highlands, aged five years and bottled at 40% ABV.
Felipe Camarena is one of tequila's great innovators, and El Pandillo's spring- and deep-well water and highland agave give Terralta a distinct terroir. For the extra añejo he uses casks that have aged añejo several times over, so the wood supports rather than overwhelms the agave, and the tequila keeps a strong agave presence alongside its complex barrel notes.
Expect thyme honey, new leather, dates, eucalyptus and lemongrass, with a touch of tobacco, along with cinnamon, berries, peach, butterscotch and vanilla, and agave coming through on the finish.
The tall bottle with its mountain label makes it a fine gift for tequila connoisseurs.

Extra añejo is the most mature category of tequila, created in 2006 for tequilas aged more than three years in oak barrels of no more than 600 litres. The long rest softens the agave's natural pepper and brings out caramel, vanilla and dried fruit, which is why extra añejos are usually enjoyed neat, like a fine cognac or whisky.
Tequila can only be made from blue Weber agave in five designated Mexican states, chiefly Jalisco, and the finest bottlings are made from 100% agave. Sipping tequila is best enjoyed from a narrow-rimmed glass that concentrates the aromas, at room temperature and without salt or lime, so the character of the agave and the barrel can come through.
