The Block Distilling Co., in the River North Arts District of Denver, Colorado, makes seasonal gins, whiskies, vodka and other spirits with the intention of bringing people together, doing things the long way by blending culinary and chemistry methods. When it set out to make gin, it found too many great botanicals, citrus and spices to stop at one, so it made four, each The Block's expression of a season. Each starts with The Block Vodka as its base, with the botanicals macerated at room temperature to extract only the best of their flavors.
The Spring Gin is a floral paradise. Delicate, floral and blossoming, it brings notes of lavender, lemon balm, rose and chamomile, with hibiscus and elderflower woven through. The distillers could call it a refreshing explosion of nuance where dew-kissed rose and hibiscus blooms dance on your tongue, but, as they say, they are distillers, not poets.
The 47% ABV gives the florals a firm structure, so the gin keeps its shape when lengthened with tonic or shaken with citrus. The same notes even inspired the distillery's boozy apple hand pie recipe.
It makes a delightful Gin & Tonic, but if you are feeling fancy, try it in a Gin Fizz with egg white, where the florals rise up through the foam for a bouquet of deliciousness.
