Tumbleroot Plata is an unaged agave spirit distilled from blue agave in small batches in Santa Fe, New Mexico, and bottled at 80 proof (40% ABV).
Because it is distilled in the United States rather than Mexico, it is classified as an agave spirit rather than tequila. Tumbleroot was established in 2018 as a combined brewery and distillery, making a wide variety of beer, spirits, liqueurs, bitters and canned cocktails by hand, from scratch, featuring organic, garden-grown and wild-harvested ingredients. The bottle carries New Mexico True certification on its neck.
The Plata is aged without wood, bypassing barrels to deliver the raw, unadulterated character of the agave and capture the essence of the high desert with clarity and balance.
It is a bold, clear spirit with robust fruity cactus flavor, spice and smokiness. Perfect in a Margarita, and best consumed in Santa Fe, the best little city on earth, ideally right after the burning of Zozobra. ¡Que viva la fiesta!
