BENDT makes whiskey from start to finish, using local North Texas grain, and the UNBENDT series takes unblended whiskey from the distillery's craft-distilled, straight, grain-to-glass range. The grain bill is as distinctive as the distillery: Elbon rye, triticale hybrid grain, Maris Otter malted barley and Naked Streaker oats, a combination that brings complexity well beyond a standard rye mash.
This release was slow-aged in the Texas heat for more than five and a half years, in 53-gallon standard bourbon barrels with a 3.5 char. As a bottled-in-bond whiskey, it is the product of one distilling season, aged at least four years in a bonded warehouse and bottled at exactly 100 proof. The result is peppery and warm, unblended and unmistakably Texan.
