Unito Mezcal Joven Espadín is an unaged artisanal mezcal from Santiago Matatlán, Oaxaca, made from 100% Espadín agave and bottled at 80 proof (40% ABV), an approachable “gateway” mezcal for sipping and cocktails.
Unito comes from Santiago Matatlán, widely regarded as the world capital of mezcal. The story began 85 years ago with Don Justo Santiago Sernas, who dedicated his life to crafting mezcal; today his son Don Abundio and grandson Ernesto “Neto” Santiago continue the family tradition.
The agaves come primarily from the family's own fields in Santiago Matatlán, complemented by trusted producers in San Juan del Río and other regions of Oaxaca. Espadín (Agave angustifolia) harvested at peak maturity is slow-roasted in a conical stone oven, naturally fermented in pine wood tanks and double distilled in copper stills.
Fresh and smooth, it delivers a clean, balanced profile with just the right touch of smoke: you get the smokiness you expect from a mezcal, but not so much that it hides the other flavors. It is a modern take on a timeless spirit, crafted in Oaxaca but built for today's drinker.
Smooth enough for sipping and bold enough for mixing, it is lovely neat, in a smoky Margarita with fresh citrus, a mezcal Old Fashioned or a mango mezcalita.
Mezcal is made by roasting agave hearts, traditionally in earthen pits, then crushing, fermenting and distilling them, a process that gives the spirit its characteristic smoky depth. Each agave variety and each village brings its own character, which is why enthusiasts love exploring small-batch bottlings.
