Volans Blanco is an additive-free tequila made from mature, hand-selected Blue Weber agave in the Los Altos highlands of Jalisco, under master distiller Felipe Camarena at NOM 1579 in Jesús María. It is bottled at 80 proof (40% ABV).
The agave is slow-cooked for 22 hours, then cooled for up to 36 more before fermentation. Volans uses a unique trifecta of water sources: rainwater for purity, water from a well more than 450 feet deep, and fresh spring water. After distillation the tequila goes through an aeration and oxygenation process that gently lifts away harsh compounds and gives it a rounded mouthfeel made for sipping.
The nose is full of sweet cooked agave, minerals and floral notes, with citrus, black pepper, apple and pear. On the palate come cooked agave, black pepper, citrus, a touch of smokiness and florals. It is impeccably clean and mineral-driven, alive with the character of the agave.
Its tall bottle with the teal hummingbird label makes it an elegant gift for tequila lovers.
Blanco tequila is bottled unaged or rested for less than two months, so it shows the agave at its purest: bright, peppery and fresh. It is the classic choice for margaritas and palomas, and a good blanco is just as rewarding sipped neat.
