Sentinel began with a question Whiskey Del Bac's customers kept asking: what if we added a Southwest twist on rye? It starts with a sweet, bold blend of three-year-old and two-year-old 95% rye, 5% malt straight rye whiskies distilled and aged in Indiana. The blend is finished on freshly harvested Del Bac mesquited barrel staves, then filtered across mesquite charcoal from the distillery's mesquited malting process, and finished with a hot Sonoran summer. Dubbed Sentinel, meaning one who watches over or is the keeper of, it honors America's oldest whiskey style while capturing the essence of the desert.
Aromas and flavors of dill, citrus zest and herbal spice come with hints of vanilla and caramel, then brown spice notes of cardamom and cinnamon and a smooth, silky finish. The mesquite shows as gentle grilled and roasted notes that complement the fruit.
