Whispering Waters Girvan 27 Year Old is a single cask, single grain Scotch whisky distilled on 27 March 1997 at the Girvan distillery and bottled in July 2024. Bottled at natural cask strength, 52.6% ABV, with its natural colour and without chill filtration, it yielded just 265 bottles.
Whispering Waters is the independent bottling brand founded by The Whiskey Lab and its founders Jay Roberts and Mark Sumlin, and this Girvan was its very first release. Girvan, on the Ayrshire coast, is William Grant & Sons' grain distillery, and its spirit usually disappears into famous blends. The choice carries a personal connection: co-founder Jay traces his family to Clan MacGregor, whose name graces a William Grant blend.
Nearly three decades in wood have given it a rich, buttery and tropical character that bridges the gap between bourbon and Scotch.
The bottle carries Whispering Waters' illustrated label with the cask details. It is a rare find for collectors of very old Scotch and a remarkable gift.
Pour it neat and give it time to open; old grain whiskies reveal their layers slowly.
Scotch whisky must be distilled and matured in Scotland for at least three years in oak casks, and any age statement on the label refers to the youngest whisky in the bottle.
Single grain whisky is distilled in continuous column stills, mostly from wheat or maize, and is usually bottled young or used in blends. Long maturation softens it into something round, sweet and dessert-like, with the cask giving vanilla and toffee, which is why very old single grains have become prized by collectors.
