Wild Common Cuishe is a small-batch mezcal artesanal from San Luis Amatlán, Oaxaca, made from cuishe, a slow-maturing wild agave of the karwinskii family, and bottled at 46% ABV.

It is made by maestro mezcalero Gregorio García and his son Luis, who hail from the high desert of San Luis Amatlán, and it reflects the terroir of their family property. The piñas are roasted in underground pit ovens with volcanic stone, crushed by a horse-drawn tahona, fermented naturally with wild yeasts in open-air wooden vats and double distilled in copper pots. Cuishe grows tall and stalk-like and yields less sugar than espadín, which makes its mezcal highly prized.

Green in its aromas and taste, it brings full, fruity agave with fresh oranges, cut grass and a whisper of smoke, then crisp cucumber, celery, cilantro, green apple, sweet lime and a dry, slate-like minerality.

Fresh, clean and vibrant, it makes a fine gift for mezcal explorers.

Sip it slowly from a copita at room temperature.

Mezcal is made by roasting agave hearts, traditionally in earthen pits, then crushing, fermenting and distilling them, a process that gives the spirit its characteristic smoky depth. Each agave variety and each village brings its own character, which is why enthusiasts love exploring small-batch bottlings.

Mezcal and other agave spirits are traditionally sipped from a copita or a small clay cup, in small sips, often alongside orange slices dusted with sal de gusano. Many are made in tiny batches by individual families, so each bottle is a snapshot of a particular place, agave and season.
