Wilde Irish Gin is an additive-free, non-chill filtered gin handcrafted in West Cork, Ireland, from 100% Irish grain with 11 botanicals including wild mountain heather, bottled at 94 proof (47% ABV).
Founded in 2021 by long-time friends Stuart Hall and Conor Quinn and inspired by Oscar Wilde, it is made by master distiller Deirdre Bohane, Ireland's first female master distiller. The 11 botanicals, led by Irish mountain heather and bitter orange peel alongside juniper, whole limes, angelica, orris root, chamomile, licorice, coriander leaf, red grapefruit and sweet orange, are cold infused in neutral grain spirit for 16 to 18 hours. The base is strained, blended with local spring water and slowly distilled in a single copper pot still, then left non-chill filtered so every aromatic oil stays in the glass.
A London Dry backbone with a floral-citrus twist: classic juniper with bright citrus and floral lift, grapefruit and lime up front, notes of lavender and heather, and a clean, dry, aromatic finish.
