William Wolf Rye is a 100% rye whiskey pot-distilled at the Zuidam Distillery in Baarle-Nassau, the Netherlands, from rye and malted rye, bottled at 92 proof (46% ABV).
What separates this rye from nearly every other on the market is its 11-day fermentation, during which it undergoes malolactic fermentation, a technique far more common in winemaking than whiskey. The extended fermentation converts sharper malic acids into softer lactic acids for a gentler, more fruit-driven rye. It earned first place for Best World Rye Whisky at the International Whisky Competition and 92 points (Highly Recommended) at the 2016 Ultimate Spirits Challenge.
Spiced apple pie and poached peach lead the aroma. Baking spices build to a lively heat on the palate while cooked apple notes persist; it is brisk and oaky, accented with vanilla, pecan and dried apricot, finishing lightly sweet and gently spiced.
The black-and-gold wolf label makes it a bold gift.
