Woodinville Straight Bourbon Finished with Applewood Staves is a Washington State straight bourbon, fully matured and then finished with toasted applewood staves, bottled at 100 proof (50% ABV).
It starts with Woodinville's five-year-aged bourbon, made from a mash bill of 72% corn, 22% rye and 6% malted barley grown on the Omlin family farm in Quincy, Washington. Woodinville handles everything from grain to bottle on site, ageing in open-air-seasoned, toasted and heavily charred oak barrels in private barrel houses across the Cascade Mountains, where big temperature swings drive deep oak influence.
After full maturation, toasted applewood staves are added to impart extra flavour, giving traditional bourbon richness a subtle orchard twist. Woodinville was founded by two friends with guidance from David Pickerell, former Master Distiller of Maker's Mark.
Fresh apple and ripe berries layer over caramel, dark chocolate and vanilla bean, with toffee, dried orchard fruit and light apple spice, and a sweet finish of warm oak. It makes a fine gift.
Enjoy it neat or with a splash of water.
Bourbon must be made in the United States from a mash of at least 51% corn and aged in new charred oak containers, and straight bourbon must be aged at least two years. Those rules give bourbon its characteristic sweetness, with caramel and vanilla drawn from the charred barrels.
