Provisional is the barrel-rested, distiller's reserve edition of You & Yours London Dry Gin from San Diego, California, a gin distilled from grapes and rested in used domestic single malt whiskey barrels, bottled at 94 proof (47% ABV).
You & Yours Distilling Co. brings a modern take on a classic spirit to downtown San Diego. Provisional is the distillery's rotating barrel-rested gin: for this batch, the London Dry Gin rested for a little over two months in single malt whiskey barrels, making it the perfect nightcap. The base London Dry recipe is distilled from grapes with juniper, pink peppercorn, cloves, orris root, spruce tips and blood orange: juniper-heavy, complemented by spruce and orris, with richness and a hint of floral spice from the blood orange and pink pepper.
Golden from its time in wood, it pairs the piney, spicy juniper backbone with blood orange, pink peppercorn and clove, softened by malty whiskey-barrel character.
The illustrated Distiller's Reserve label makes it a unique gift.
London Dry gin gets all its flavor during distillation.
Barrel resting softens gin and adds gentle wood notes.
A grape base gives the spirit a rounder, softer texture.
It pairs with charcuterie, aged cheese or dark chocolate.
It is a great pick for whiskey drinkers curious about gin.
Small rotating batches make each release a little different.
