Zignum Silver is an unaged, 100% Espadín mezcal from Oaxaca, made at Casa Armando Guillermo Prieto (NOM O50X) in Tlacolula de Matamoros.
Zignum takes a modern approach to mezcal. Rather than roasting the agave hearts in underground pits, the 100% Espadín is steam-cooked in autoclaves at a large, modern production facility, one of the largest spirits producers in Oaxaca. That method sets it apart from most mezcals with a notably low-smoke profile.
Unaged after distillation, the Silver puts the agave front and center. It is a smooth, approachable introduction for drinkers who prefer bright agave flavor to heavy smoke, and it earned an A- rating from Good Spirits News.
It brings bright citrus and sweet green agave notes with minimal smoke, light on the palate and clean on the finish. Enjoy it the traditional way, at room temperature in a veladora glass with an orange slice and salt, alongside a beer, or in classic cocktails.
Mezcal is made by roasting agave hearts, traditionally in earthen pits, then crushing, fermenting and distilling them, a process that gives the spirit its characteristic smoky depth. Each agave variety and each village brings its own character, which is why enthusiasts love exploring small-batch bottlings.
Mezcal and other agave spirits are traditionally sipped from a copita or a small clay cup, in small sips, often alongside orange slices dusted with sal de gusano. Many are made in tiny batches by individual families, so each bottle is a snapshot of a particular place, agave and season.
