Tears of Llorona No. 3 is an extra añejo tequila from Master Distiller Germán González Gorrochotegui, aged for five years in separate casks that previously held Scotch whisky, sherry and brandy before being married together. It is bottled at 43% ABV in a one-litre bottle, and only a few thousand bottles are produced each year.
González chose each cask for what it brings: Scotch casks for dryness, sherry for a little fruitiness and brandy for a little sweetness. Before settling on that trio, he experimented with around a dozen different barrels, including wine, cognac and brandy, blending by trial and error until he found the balance he wanted.
The result is deep amber in the glass. The aroma brings caramel custard, dried fruit and dark chocolate, and the taste is agave with a heady spiciness and complexity for experienced palates. The finish is best described, in González's words, as a warm scarf on a cold day.
González suggests a wide glass that lets the tequila open up: don't rush it, let it breathe, swirl it and enjoy the legs on the glass. The tall bottle with its swing-top stopper and handwritten-style label is as distinctive as the tequila inside.
